is it possible to convert from the 6-panel to the 5-panel rear lights?

On a 240? Yes. You'd need to add a small amount of sheetmetal to the rear panel to fill the gap that would be left from the 5-panels since they are about 2" shorter in overall width. That and maybe re-arranging the positions of the wires in the connector would be all it would take.
I looked pretty heavily into this, as I was considering doing this on my '83 242Ti. I still might...

I really like the euro style 5 panel, I'd like to take a set of those and convert the amber lens to clear, see: http://forums.turbobricks.com/showpost.php?p=182706&postcount=2

The other nice thing about the 5 panel lights is that they use metal circuit runners that don't break down or die like the plastic vinyl crap on the 6 panel lights. They just need to be cleaned
and protected from corrosion but it's a thick metal runner instead of cheap vinyl.

Yea I love the 5 panel tailights also. You should look into doing the conversion.

If anyone wants a set of the euro 5-panels, I have two boxes full of them, including one brand new one (oooooh...shiny...but rather useless on its own - I got sniped on its partner on ebay a while back :-(). I bought in bulk after Justin bit my hand off for the first set :)

would the 5-panel lights accept the same clear corner aftermarket insert as the standard 6 panel lights? i don't care for the amber.

If it ain't the same, its VERY similar. Get me measurements of the 6-panel, and I'll return with the 5-panel measurement.
