How easy is it to replace the coolant sensor that feeds the ECU leaving the manifold alone?

it's nearly impossible with a cold start valve car, pretty difficult on one with out it. I did one in a 93 with deep 19mm 6 point socket, it will slide over electrical connector and on to the sensors hex with out messing anything up, install the new that way too
With small hands and a couple 19MM wrench and socket options (12 point varietals) it is totally doable.
If you do take the manifold off, clean the PCV setup and replace the o-rings while you're in there.
This. I use a 19mm 6pt deep socket, and an extension. It's a 5min job with minimal coolant loss. The socket will only go on one or two ways due to the sensor body, so make sure you get it clocked correctly.
