I put a separate bung in the oil pan for the sender, [stock 1990 245]. Normal temps @ 70 C. Drove up a STEEP mountain road in the Catskill's, [4 miles up,only open part of the year, barely more than a lane wide, had to use 2nd and 1st gear. ] Saw the oil temp go to 100C, cooled off soon after the top. So driving hard will raise the temp, but if you are getting high temps, and can't cool down the oil, this is not good . The race car that I built and was the crew chief for ran 40+ F over the water temp. We would tape up the oil cooler some times to get the oil hot enough,if it was too cold out, we used a big oil cooler. So 100C = 212 F, We would shoot for 235 F.
