You are thinking of it the wrong way. A 30mm Adapter would give the E39 wheel an offset of -10mm (so half of the tire, plus an additional 10mm).

You would need at least a 35mm spacer to fit, with a hub conversion of 60.1mm to 65.1mm. If you want the wheel to look more aggressive you will want to aim for 0 offset (50mm spacer).
